I’ve been trying to be more frugal lately and my grocery store had a pack of about 8 chicken thighs on sale for only $3. I had to take advantage of that. Here’s how I cooked them:
First, melt about 1/2 stick of butter in the microwave. Add about 1/4 cup of mustard to the melted butter. Stir the butter mustard until it’s fully mixed. Next you’ll coat one side of the chicken thigh with the butter mustard and then sprinkle on the Parmesan cheese fully coating that side. Flip the thigh over and do the same thing. You will want to put the thighs in a fairly deep baking pan because they get pretty juicy. Cook in oven for about 45 minutes at 400 degrees.
*Leave the skin on the chicken. It’s the best part!
I served the chicken with my Garlic Butter Mushrooms.
